We are making the most delicious lemon potatoes and the best part is they are as easy as can be, but full of flavor! Perfect to serve up next to a delicious leg of lamb on Easter Sunday! It only takes a few ingredients to make these lemony delights! Russet potatoes, lemons, olive oil, and few essential seasonings! I can’t wait for you to try these!

Tips & Tricks:

  • I used a baking sheet (cookie sheet) to make these potatoes!

  • I used russet potatoes, but you can use other varieties and that will work well, too!

  • Peel the potatoes (I usually leave a little bit of the skin on) and quarter them lengthwise.

 The BEST Lemon Potatoes

Ingredients:

  • 8 russet potatoes peeled and quartered lengthwise (I usually leave a little bit of the skin on)

  • juice of 2 lemons

  • 1/2 cup of extra virgin olive oil

  • 2 tsp. of dried oregano flakes

  • 1 tsp. of crushed red pepper

  • salt and cracked black pepper to taste

How To:

  1. Peel the potatoes and quarter them lengthwise

  2. In a bowl add the juice of 2 lemons, olive oil, oregano, and cracked black pepper and salt.

  3. Add the quartered potatoes into the bowl and toss them up.

  4. Spread them onto a baking sheet and cover tightly with foil.

  5. Bake in the oven at 350 degrees F. for about 60-70 minutes.

  6. Remove the foil and broil for a couple minutes or until you see them browning up.

  7. Serve along side of anything…especially leg of lamb!
