We are making the most delicious lemon potatoes and the best part is they are as easy as can be, but full of flavor! Perfect to serve up next to a delicious leg of lamb on Easter Sunday! It only takes a few ingredients to make these lemony delights! Russet potatoes, lemons, olive oil, and few essential seasonings! I can’t wait for you to try these!

I used a baking sheet (cookie sheet) to make these potatoes!

I used russet potatoes, but you can use other varieties and that will work well, too!

Peel the potatoes (I usually leave a little bit of the skin on) and quarter them lengthwise.

The BEST Lemon Potatoes
Ingredients:

8 russet potatoes peeled and quartered lengthwise (I usually leave a little bit of the skin on)

juice of 2 lemons
-
1/2 cup of extra virgin olive oil
-
2 tsp. of dried oregano flakes
-
1 tsp. of crushed red pepper
-
salt and cracked black pepper to taste
How To:
-
Peel the potatoes and quarter them lengthwise
-
In a bowl add the juice of 2 lemons, olive oil, oregano, and cracked black pepper and salt.

Add the quartered potatoes into the bowl and toss them up.
-
Spread them onto a baking sheet and cover tightly with foil.
-
Bake in the oven at 350 degrees F. for about 60-70 minutes.

Remove the foil and broil for a couple minutes or until you see them browning up.

Serve along side of anything…especially leg of lamb!
