Cast Iron Skillet Cornbread  Recipe


  • 2 boxes of Jiffy corn muffin mix

  • 1 ¼ cup buttermilk

  • 3 eggs

  • 4 tbsp sugar

  • 1 stick of butter (for greasing the cast iron skillet)

  • 2 tbsp butter (for the glaze)

  • 2 tbsp honey (for the glaze)


  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, combine the Jiffy corn muffin mix, buttermilk, eggs, and sugar. Stir until all the ingredients are well incorporated and the batter is smooth.

  3. Take your cast iron skillet and place the stick of butter in it. Put the skillet in the preheated oven for a few minutes until the butter melts completely.

  4. Once the butter has melted, carefully remove the skillet from the oven and tilt it to ensure the melted butter coats the entire surface of the skillet.

  5. Pour the prepared cornbread batter into the greased cast iron skillet. Make sure the batter is evenly distributed.

  6. Place the skillet back into the oven and bake for approximately 45 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.

  7. While the cornbread is baking, prepare the glaze. In a small saucepan, melt the 2 tablespoons of butter over low heat. Once melted, add the honey and stir until well combined. Remove from heat.

  8. When the cornbread is done baking, carefully remove the skillet from the oven and let it cool for a few minutes.

  9. Drizzle the butter and honey glaze over the warm cornbread, ensuring it covers the top evenly.
