Tips and Tricks:

  • Cookware: you’ll need a 1 & 1/2 quart baking dish! Any shape will work. Here’s my favorite:

  • Cooking time: I baked this for about 1 hour. Every oven is a little different. Depending on the oven it can take anywhere from 45 minutes- 60 minutes. The trick is to make sure the middle is firm. Just give the baking dish a little shake; if it doesn’t jiggle: it’s DONE!

  •  pink can opener: It works so so good and smooth AND it’s adorable! LOL here’s the link:


Melissa Jo Real Recipes 

 Corn Pudding



  • 8.5 oz. box of Jiffy Corn Muffin Mix (original)

  • 2 eggs

  • 1 cup sour cream

  • 11 oz.  can whole kernel corn (drained)

  • 14.75 oz. can of creamed corn

  • 1/2 cup of  melted butter (1 stick)

  • 2 tbsp. of sugar

  • 2 tbsp. of honey

  • 1 tbsp. of black pepper (don’t get fancy; just add table pepper)

  • optional: 1/2 tsp. of cayenne pepper if you like a little heat


  1. Grease a 1 & 1/2 quart baking dish with butter; make sure you grease all around the dish even up the sides

  2. sprinkle a little sugar over the buttered baking dish

  3. in a large bowl add and whisk:

    1. Jiffy mix

    2. sugar

    3. pepper

  4. whisk the eggs in a separate bowl

  5. to the large bowl add:  melted butter, the whisked eggs, creamed corn, whole kernel corn (make sure you drain it), 1 cup sour cream, honey, and optional: cayenne pepper

  6. mix together with a spoon (make sure it’s all incorporated)

  7. add to the baking dish

  8. bake at 375 on middle rack for about 1 hour. Depending on your oven it can bake anywhere from 40 minutes- 1 hour. The trick is to make sure the center is firm. Then it is done!

  9. serve with a drizzle of honey and ENJOY!
