Oven Baked Roasted Tomato Rice Recipe


  • 2 pints of cherry tomatoes

  • 5 cloves of chopped garlic

  • 2 sliced shallots

  • 6-7 leaves of fresh basil, roughly chopped

  • Kosher salt and cracked black pepper (to taste)

  • 2 tablespoons of olive oil

  • 1 and a 1/2 cups of jasmine rice

  • 2 and 1/2 cups of chicken or vegetable stock

  • Fresh parsley for garnish

Step-by-Step Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. In a 9×13 baking dish, add the cherry tomatoes, chopped garlic, sliced shallots, fresh basil, kosher salt, cracked black pepper, and olive oil. Give it a gentle toss to ensure everything is well combined.

  3. Place the baking dish in the preheated oven and let the ingredients roast for about 50-60 minutes or until the cherry tomatoes turn golden and release their natural juices.

  4. Once the roasted tomatoes are ready, remove the baking dish from the oven. Carefully add the jasmine rice and chicken or vegetable stock to the dish, ensuring the rice is evenly distributed. Mix everything together.
