Pesto Mozzarella Chicken Sandwich Recipe
Ingredients:

2 large chicken breasts (butterflied and pounded flat)

4 ciabatta rolls

Seasoning for Chicken:

2 tsp paprika

1 & 1/2 tsp Italian seasoning

Salt and pepper (to taste)

1-2 tbsp avocado oil
-
4 tbsp mayo

1/2 cup arugula
-
6 oz. fresh mozzarella (cut into thick slices)

8 cherry tomatoes (cut in half)

About 1/3 cup of your favorite pesto
Directions:

Let’s start by giving those chicken breasts some love. Butterfly them and give them a little TLC with a flattening session. We want them to be thin and fabulous.
