 Pesto Mozzarella Chicken Sandwich Recipe


  • 2 large chicken breasts (butterflied and pounded flat)

  • 4 ciabatta rolls

  • Seasoning for Chicken:

    • 2 tsp paprika

    • 1 & 1/2 tsp Italian seasoning

    • Salt and pepper (to taste)

  • 1-2 tbsp avocado oil

  • 4 tbsp mayo

  • 1/2 cup arugula

  • 6 oz. fresh mozzarella (cut into thick slices)

  • 8 cherry tomatoes (cut in half)

  • About 1/3 cup of your favorite pesto



  1. Let’s start by giving those chicken breasts some love. Butterfly them and give them a little TLC with a flattening session. We want them to be thin and fabulous.

  2. Shake things up by mixing paprika, Italian seasoning, salt, and pepper. Sprinkle that mix all over the chicken, making sure it’s partying on both sides.

  3. Heat up a pan, add a splash of avocado oil, and let’s get those chicken breasts sizzling. Cook them until they’re golden brown and doing a happy dance.

  4. Time for the ciabatta rolls to join the party. Pop them in the pan and press them down with your magical fingers until they’re golden and crispy. Then, give them a well-deserved break on the sidelines.

  5. Now comes the fun part – assembling! Lay those ciabatta rolls on a baking sheet and start spreading the mayo love on the bottom halves.

  6. Arugula, come on down! Sprinkle some of that vibrant goodness onto the mayo-covered rolls.

  7. The chicken takes the stage next. Place those golden beauties on the arugula, and let’s make them feel at home.

  8. Cherry tomatoes, you’re up! Give them a happy place on the chicken, cut side up, so they can share their juicy vibes.
