Meatloaf is one of the most underrated meals! I for one, have always loved a good meatloaf and the secret is the flavoring and how to make the meatloaf moist! After researching for my vintage recipe series, I think I came up with the most delicious flavorful moist recipe you are going to love!! The ingredients are simple, but the results are anything but! Very few ingredients so it makes this dish really affordable for a family, as well! And the leftovers will be just as good for sandwiches, subs, and chopped up and mixed with veggies and rice for a delicious lunch bowl!

Ingredients:

  • 1-1.5  lbs. ground beef

  • 3/4 cup Italian breadcrumbs

  • 1/4 cup chopped onion

  • 1 egg

  • 1/4 cup milk

  • 1 tsp. salt

  • 1/2 tsp. pepper

  • 1/2 cup ketchup (divided)

 Directions:

    1. Preheat oven to 350°F.

    2. In a bowl, mix together the ground beef, breadcrumbs, chopped onion, 1/4 cup of ketchup, egg, milk, salt, and pepper.

    3. Press the mixture into a baking dish and form a loaf

    4. Spread 1/4 cup ketchup over the top of the loaf.

    5. Wrap the meatloaf with 3 pieces of bacon lengthwise and 3 pieces across the width and tuck any remaining long pieces under the loaf.

    6. Bake for 1 hour, or until cooked through.

    7. Enjoy over mashed potatoes or rice and a vegetable! Delicious and moist!
