EASY Cherry Chocolate LOVE Cake

ANY DAY! you HAVE to make this EASY cherry chocolate love cake! It’s only 5 ingredients and tastes like you toiled and worked in the kitchen all day! SO delicious and whoever you make this for will love it! Cherries, chocolate, and homemade icy icing that is a beautiful pinky pink from the juice of the cherries! YOU MUST MAKE!

Cherry Chocolate Love Cake

Ingredients
  

  • 1 box of chocolate cake mix 15.25 oz.
  • 12 oz. of cherry vanilla coke
  • 10 oz. jar of Maraschino cherries and the juice from the jar
  • 2 sticks of butter salted
  • 6-7 oz. of powdered sugar
  • Baker’s Joy non stick spray or butter to grease the pan

Instructions
 

  • combine and whisk together the cake mix and Cherry Vanilla Coke until incorporated
  • add a jar of quartered cherries to the batter and fold in gently
  • spray a 9 x 13 baking dish with Baker’s Joy or grease the dish with butter
  • Bake for 30 minutes at 350 (let it cool completely afterwards)
  • For the icing:
  • add the butter to a bowl
  • beat the butter with a hand mixer until it’s fluffy
  • beat in the powdered sugar one cup at a time (this seems impossible, but it isn’t…keep going)
  • add 3-4 oz. of cherry juice from the jar and beat a couple more minutes until it’s pretty in pink
  • Once the cake is cooled completely ice the cake
  • serve and garnish each piece with a Maraschino cherry

Notes

  • Cherry Vanilla Coke:  The Cherry Vanilla COke is so delicious in it, but it may be hard to find. If you can’t find it use Cherry Coke, Vanilla Coke, Regular Coke, or any Cola at all!
  • Store for a few days on the counter, but wrap in plastic wrap and go the extra step of putting in a ziplock or container with a lid
  • Icing: Be patient with the icing. It may seem impossible to incorporate with the mixer, but don’t be scared! It’ll work! Keep going until it’s nice and fluffy!
