Bacon Wrapped Stuffed Chicken Thighs

5 ingredients and you are going to have DELICIOUS Bacon Wrapped Stuffed Chicken Thighs. Boneless skinless chicken thighs result in the juiciest result. Add Boursin Cheese, sun-dried tomateos, and mozzarella. Then, rolly roll! No toothpicks required! Wrap in bacon and bake in the oven! Enjoy!

Step 1: Preheat Oven
  1. Preheat oven to 450°F.
  2. Line a baking sheet with foil and place a cooling rack on top.
Step 2: Prepare the Chicken
  1. Pat chicken thighs dry with paper towels.
  2. Lay them flat with the textured side facing up and season lightly with salt and pepper.
Step 3: Add the Filling
  1. Spread about one sixth of the Boursin cheese on each chicken thigh.
  2. Top with a few pieces of julienned sun-dried tomatoes.
  3. Sprinkle a small handful of shredded mozzarella on top.
Step 4: Roll the Chicken
  1. Roll each chicken thigh tightly from one end to the other.
Step 5: Wrap with Bacon
  1. Stretch a slice of bacon slightly and wrap it around the rolled chicken.
  2. Place seam-side down on the rack.
Step 6: Add Oil and Seasoning
  1. Drizzle lightly with olive oil and a little sun-dried tomato oil.
  2. Sprinkle with freshly cracked black pepper.
Step 7: Bake
  1. Bake for 30 minutes, until the bacon is crispy and the chicken reaches 165°F internal temperature.
