One-pan creamy spinach artichoke orzo with smoked sausage recipe is easy prep, easy cleanup, & made in one baking dish. Orzo, sausage, spinach, and tomatoes cooks together & bakes into the creamiest dinner.

  1. Preheat oven to 375°F and lightly grease a large baking dish.
  2. Add the orzo directly to the baking dish, spreading it out evenly.
  3. Scatter the cherry tomatoes over the orzo.
  4. Dot with butter, placing small pieces around the dish.
  5. Add the smoked sausage, distributing it evenly so every bite gets some.
  6. Season with garlic salt and cracked black pepper.
  7. Layer in the baby spinach, pressing it down gently.
  8. Spoon the creamy spinach artichoke dip over the top — no need to spread perfectly.
  9. Pour in the chicken stock, making sure the orzo is mostly submerged.
  10. Cover tightly with foil and bake for 35–40 minutes, until the orzo is tender.
  11. Remove foil, stir gently, and bake uncovered for another 5–10 minutes until creamy and slightly thickened.
  12. Let sit for 5 minutes before serving to allow everything to set up.
