Crockpot Salsa Verde Chicken
So my kids are always getting DoorDash or running to Chipotle and I've devised a plan to keep them from wasting their money. So in that pursuit of happiness, I discovered something that should actually be added to Chipotle's menu. What I created is better than anything Chipotle could EVER do. And that is the truth. So here we go. I served this up to my kids and you know what Anthony said? He said Chipotle could never. So Chipotle, I am reaching out. This blog is for you. Check it out. Add it to the menu and otherwise, if you're not Chipotle, you should make it yourself. And that's it. It's salsa verde chicken. Chipotle I’ve found your new menu item to compete with me!
Ingredients
Crock Pot Recipe
- 1 ½ lbs boneless skinless chicken breasts or thighs
- 2 tbsp olive oil
- 1 packet Sazón seasoning
- 16 oz jarred salsa verde
- ½ tbsp adobo seasoning
- I tbsp minced garlic and red pepper
- 1 4 oz can diced green chilies
Rice Bowl
- ½ cups cooked long grain white rice or jasmine rice
- ¼ shredded Monterey Jack cheese
- Fresh cilantro for garnish
- Diced tomato
- Chopped lettuce
- Sour cream for serving (optional)
- Juice of a lime
- Half an avocado cubed
Instructions
- Add chicken to the crockpot, drizzle with olive oil and season with adobo and Sazón.
- Add minced garlic and red chili pepper, salsa verde,and green chilies over the chicken.
- Cover and cook on HIGH for 3–4 hours or LOW for 6–7 hours, until chicken is cooked through and easy to shred.
- Meanwhile, cook 1 ½ cups of long grain white rice or jasmine rice on the stovetop or in a rice cooker.
