Crockpot Sofrito Pork

Friends, Today I have the absolute best Crockpot meal I've made in a while. This meal is absolutely delicious and has so much flavor. It's marinated with Mojo Marinade, and seasoned to perfection. This dish will have your entire family begging you for the recipe all week after having this dish. Underneath the pork I added a delicious chicken stock rice, I added chicken seasoning to my rice maker and got this delicious rice that paired so perfectly with the pork. The rice itself is not listed on this blog but it is just chicken seasoning and rice combined if you want the rice I used in this picture.

Ingredients
  

  • 2.5-3 lb Pork Boston Butt Roast
  • seasoning: 2-3 tbsp Adobo 2 tsp paprika, 1 tsp cracked black pepper, 1 tsp of salt
  • 4 tbsp Sofrito Criollo
  • 5 oz Mojo Marinade 1/2 bottle
  • 1 sliced onion
  • salt and pepper to taste
  • Rice for serving

Instructions
 

  • Season a room temperature patted completely dry Boston Butt Roast with Adobo, paprika, cracked black pepper and salt. Place in Crock pot
  • add 4 tbsp of Sofrito on top of the Roast and slather all over roast
  • pour the Mojo marinade over the pork roast
  • scatter sliced onion on top of roast.
  • Set crock pot to high and cook for about 6-8 hours or unitl desired tenderness.
  • Serve over rice and with a side salad for a full DELICIOUS dinner!
