Easy Tropical Fruit Salad

A refreshing mix of frozen and fresh fruit tossed in a bright citrus ginger dressing — perfect for summer gatherings.

Ingredients
  

  • 3 lbs Wyman’s Tropical Berry & Coconut frozen
  • 2 cans mandarin oranges drained
  • 2 pints fresh blueberries
  • 3 bananas sliced last
  • ½ cup grapefruit juice Natalie’s works great
  • Zest of 1 lime
  • Zest of ½ orange
  • Juice of 1 lime
  • Juice of 1 orange
  • 1 tsp fresh grated ginger

Method
 

  1. Take the frozen fruit out and let it sit at room temperature for about 1–2 hours to slightly thaw.
  2. Add the fruit to a large bowl along with the mandarin oranges and fresh blueberries.
  3. In a separate bowl, make the citrus dressing:
  4. Grapefruit juice
  5. Lime zest + juice
  6. Orange zest + juice
  7. Grated ginger
  8. Mix well.
  9. Pour half of the dressing over the fruit and gently toss.
  10. Transfer to your serving bowl.
  11. Slice the bananas and place them on top.
  12. Pour the remaining dressing over everything, give it a light toss, and serve immediately.
