2cupsfreshly shredded Colby Jack cheesereserve ¼ cup for topping
5–6 stalks green onionssliced (reserve some for garnish)
8ozcream cheeseroom temperature
1½sticks salted butterroom temperature & divided
1sleeve Ritz crackers32, crushed
Instructions
In a large bowl, combine shredded chicken, cooked rice, Italian seasoning, minced garlic, cream of chicken with herbs soup, 1¾ cups shredded cheese (reserving ¼ cup for topping), and most sliced green onions (saving some for garnish). Mix thoroughly and set aside.
In a microwave-safe bowl or measuring cup, melt together the cream cheese and 1 stick (4 tbsp) butter (about 30 seconds). Whisk until creamy, then stir into the chicken-rice mixture.
Transfer the mixture to a greased baking dish and smooth the surface. Sprinkle the reserved ¼ cup shredded cheese evenly over the top.
In another container, melt ½ stick (4 tbsp) butter. Toss it with the crushed Ritz crackers, then spread the buttery crumbs evenly over the cheese layer.
Cover the dish with foil and bake at 375°F for 15 minutes. Remove the foil and bake for another 15 minutes, until bubbling and golden.
