Make Instant Pot Italian Sausage & Rice when you want links of italian sausage, uncooked long or medium grain white rice, and carrots in one delicious main course.
Prep Time 25 minutes
Course: Main Course
Cuisine: American

Ingredients

  • 4 links of Italian sausage sliced into 1/ 2inch chunks
  • 2 tbsp olive oil
  • 2 cups uncooked long or medium grain white rice
  • 3 carrots chopped
  • 1 red bell pepper diced
  • 1 onion diced
  • 6 cloves of garlic chopped
  • 3 tbsp tomato sauce I used Rao's marinara
  • 3 cups water
  • 1/4 tsp crushed red pepper
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley & green onions chopped, for garnish

Method

  1. Start by slicing Italian sausages into hearty 1/2-inch chunks –
  2. Turn the sauté feature on your Instant Pot and add the olive oil and once it's hot add the Italian sausage chunks and sauté unit golden brown.
  3. Push the sausage slices to the edges of the pot, making room in the center. Add in your diced onion, chopped carrots, diced red bell pepper, and chopped garlic (6 cloves, to be precise). Sprinkle in the crushed red pepper, garlic powder, salt, and pepper. Mix it all up and sauté until everything is gloriously golden and aromatic.
  4. Then, add 2 cups of long grain or medium grain uncooked rice and sauté with the rest of the contents for about 2-3 minutes before adding water.
  5. Now: pour in 3 cups of water & mix. Then, add 3 tbsp of tomato sauce. Mix again.
  6. Turn the pot off. Then, click pressure cook and set the timer to 3 minutes. Remember, it cooks 3 minutes, but it takes about 5-8 minutes to build up the pressure. Don't worry, it'll cook. Just set it and go.
  7. Once it's done cooking allow the pressure and steam to naturally release. Don't use the quick release valve. This will ensure you have perfectly cooked rice.
  8. Now, scoop out this flavor-loaded goodness into a family-sized bowl. Drumroll, please!
  9. To add a final touch of vibrancy, sprinkle a generous amount of freshly chopped parsley and chopped green onions on top. It's not just a garnish; it's a flavor pop that ties the whole dish together.
  10. Gather your loved ones, take a moment to appreciate the scrumptious masterpiece before you, and dig in! Each forkful is a ticket to flavor paradise.

Notes

  • For recipes using rice let the instant pot naturally vent instead of doing a quick release. This will ensure fluffy delicious rice!
