Lazy Chicken “Poor Man’s” Casserole

Creamy, cheesy baked chicken and noodle casserole layered with marinara and mozzarella. Made with rotisserie chicken for an easy, budget-friendly comfort meal.

Cook noodles

  • Cook egg noodles according to package directions. Drain and set aside.

Make the creamy mixture

  • In a large bowl, mix together:
  • softened cream cheese
  • sour cream
  • garlic powder, onion powder, Italian seasoning
  • Tony Chachere’s Creole Seasoning
  • colby jack cheese (1 cup)
  • cooked noodles
  • shredded rotisserie chicken.

Layer the casserole

  • Spread a thin layer of marinara sauce on the bottom
  • Add half of the creamy noodle mixture
  • Sprinkle mozzarella cheese
  • Spoon over 1/2 marinara sauce
  • Add the remaining noodle mixture
  • Add last 1/2 of marinara sauce
  • Top with mozzarella cheese and colby jack for color.

Bake

  • Bake at 350°F for 30–35 minutes uncovered, until hot, bubbly, and the cheese is melted. On middle to lower middle rack.

Finish & serve

  • Let rest for 5–10 minutes, then garnish with parsley if desired and serve.
