Ingredients
  

  • 1 lb ground breakfast sausage
  • 1 30–32 oz bag frozen shredded hash browns, thawed
  • 8 large eggs
  • 8 oz mascarpone cheese must be room temperature
  • 1 ½ cups freshly shredded mozzarella
  • 8 oz freshly shredded sharp cheddar
  • 1 –2 tablespoons chopped fresh chives plus extra for topping
  • Salt & freshly cracked black pepper to taste
  • Optional: ½–1 teaspoon Italian seasoning
  • Nonstick spray like Pam or butter for greasing the baking dish

Method
 

Cook the Sausage
  1. Brown the ground sausage in a skillet over medium heat, breaking it into small crumbles. Drain any excess grease and let it cool slightly.
Prep the Egg & Mascarpone Mixture
  1. In a large bowl, lightly beat the eggs with a fork — just enough to break them up.
  2. Add the room-temperature mascarpone.
  3. Use your fork to press the mascarpone gently along the sides of the bowl to help break it down.
  4. Add salt, pepper, and Italian seasoning (optional).
  5. Whisk until it is almost incorporated — it may look a little lumpy, and that’s totally fine.
Assemble the Casserole
  1. Grease a 9×13-inch baking dish with Pam or butter.
Layer in this exact order:
  1. Hash Browns
  2. Add thawed hash browns to the dish.
  3. Season with a little salt and pepper.
  4. Toss with your hands to coat evenly.
  5. A Handful of Mozzarella
  6. Sprinkle just a handful over the hash browns.
  7. Cooked Sausage
  8. Spread evenly over the cheese layer.
  9. A Light Sprinkle of Cheddar
  10. Just a small amount before the egg mixture.
  11. Egg-Mascarpone Mixture
  12. Pour evenly over the entire dish.
  13. Remaining Cheese
  14. Sprinkle the rest of the mozzarella and cheddar over the top.
  15. Add 1–2 tablespoons chopped chives.
Bake
  1. Bake at 350°F for 45–55 minutes, or until the center is set and the top is lightly golden.
Rest & Serve
  1. Let the casserole rest for 10 minutes before slicing.
  2. Sprinkle extra fresh chives on top before serving.
