Method
Cook the Sausage
- Brown the ground sausage in a skillet over medium heat, breaking it into small crumbles. Drain any excess grease and let it cool slightly.
Prep the Egg & Mascarpone Mixture
- In a large bowl, lightly beat the eggs with a fork — just enough to break them up.
- Add the room-temperature mascarpone.
- Use your fork to press the mascarpone gently along the sides of the bowl to help break it down.
- Add salt, pepper, and Italian seasoning (optional).
- Whisk until it is almost incorporated — it may look a little lumpy, and that’s totally fine.
Assemble the Casserole
- Grease a 9×13-inch baking dish with Pam or butter.
Layer in this exact order:
- Hash Browns
- Add thawed hash browns to the dish.
- Season with a little salt and pepper.
- Toss with your hands to coat evenly.
- A Handful of Mozzarella
- Sprinkle just a handful over the hash browns.
- Cooked Sausage
- Spread evenly over the cheese layer.
- A Light Sprinkle of Cheddar
- Just a small amount before the egg mixture.
- Egg-Mascarpone Mixture
- Pour evenly over the entire dish.
- Remaining Cheese
- Sprinkle the rest of the mozzarella and cheddar over the top.
- Add 1–2 tablespoons chopped chives.
Bake
- Bake at 350°F for 45–55 minutes, or until the center is set and the top is lightly golden.
Rest & Serve
- Let the casserole rest for 10 minutes before slicing.
- Sprinkle extra fresh chives on top before serving.
