Easy Lemon Alfredo
Ingredients
- 20 oz five cheese tortellini
- 6 garlic cloves chopped
- 2 lemons juice & zest
- 1 quart heavy cream
- 1 stick salted butter
- 1 & ¼ cup grated pecorino romano
- 1 lb frozen broccoli florets
- Salt & pepper to taste
Instructions
- In a pot add butter and let it get melty. Then add in the lemon zest and salt & pepper.
- Let that saute for about 3 minutes.
- Next add in lemon juice and give that a stir.
- Then pour in the heavy cream and more salt & pepper.
- Bring the pot to a boil and once it comes to a boil lower it to a simmer. Simmer for 4-7 minutes or until it thickens up a bit.
- Then add in the pecorino romano and chopped garlic.
- Whisk that together until everything is incorporated.
- Bring the pot back to a boil, lower it to a simmer, and let that simmer for 5-7 mins
- Add in the frozen broccoli and bring the pot back to a boil.
- Once it comes to a boil, lower it to a simmer, and let that simmer for about 3-5 minutes or until the broccoli is soft.
- Boil the tortellini in salted water for 2 minutes.
- Once the tortellini is halfway cooked add it to the alfredo sauce letting a little bit of the pasta water drip in.
- Stir everything together and let the tortellini finish cooking in the sauce for 2-3 minutes.
- Garnish with more grated pecorino romano and enjoy! The sauce will thicken as it stands.
- Allow the dish to set up for 5 minutes before serving.
