Lemon Brownie Bars

Melissa Jo

  • 1 cup of all purpose flour
  • 3/4 cup white sugar
  • 1/4 tsp of salt
  • 1/4 tsp of baking soda
  • 2 eggs
  • 1/4 cup sour cream
  • 3 tbsp of vegetable oil
  • zest of 2 lemons
  • 2 tbsp of fresh lemon juice
  • butter or PAM cooking spray to grease your pan

  • 1 cup powdered sugar
  • zest of 1 lemon
  • 4 tbsp of lemon juice

  • lemon zest

  • in a large bowl- add 1 cup of sifted all purpose flour
  • add sugar, salt, and baking soda
  • add eggs, sour cream, & vegetable oil
  • add lemon zest & lemon juice
  • Mix all of the above ingredients by hand just until it’s smooth
  • line an 8×8 baking dish with parchment paper (I spray the parchment paper with cooking spray for even easier removal)
  • add the batter and spread it out evenly in the pan
  • Bake for about 20 minutes at 350
  • Let the lemonies cool about 10 minutes in the pan
  • remove from pan
  • add all of the ingredients for the glaze together and mix
  • pour and spread the glaze over the lemonies
  • add lemon zest as a garnish
  • cut and serve

  • Storage:  First, you need to let your lemonies cool completely before wrapping, storing, or serving

  • Store for a few days on the counter, but wrap in plastic wrap and go the extra step of putting in a ziplock or container with a lid

  • You can also store in the refrigerator and it will last about 6-8 days
