Sausage and Pepper Sunday Sauce

So many ways to make Sunday Sauce, so little time. You’ve probably already made my Homemade Sauce, My Stick of Butter Sauce, Chicken Cacciatore or my Italian Quick Sauce. but, I know you’ve never made my Sausage and Pepper Sunday Sauce. Here’s the thing, This is such a delicious sauce and even better you cook it in the oven. It’s simple to make using your favorite ingredients such as Italian Sausage, Bell Peppers and Onions, and of course San Marzano Tomatoes. If you’ve never tried this method you surely are in for a treat. Grab your fettuccine and let’s MAKE IT!

Simply sauté the sausage, bell peppers, onions and garlic in olive oil, once it’s golden add tomato paste and continue sautéing. Deglaze with the cabernet and then add your cans of tomatoes. Bring to a boil and lower on simmer and cook it for two hours.

Sausage and Pepper Sunday Sauce
Ingredients
- 20 oz of Hot or Mild Italian Sausage
- 1 lb of fettuccine
- 1 tbsp of tomato paste
- 28 oz Can of Crushed Tomatoes San Marzano
- 28 oz Can of Whole Tomatoes San Marzano
- 1 tbsp of salt divided
- 1 tbsp of black pepper divided
- 1/2 tsp of crushed red pepper Adjustable
- 1 oz chunk of pecorino romano
- 1 green bell pepper sliced into thin strips
- 1 red bell pepper sliced into thin strips
- ½ sweet onion sliced into thin strips
- 5 cloves of garlic sliced into slivers
- 4 tbsp of olive oil
- ½ cup of cabernet
Instructions
- Get a 9×13 baking dish, Add a can of crushed tomatoes and A can of Whole Peeled Tomatoes to the baking dish.
- Use a potato masher to crush up the Whole Peeled Tomatoes
- Season with ½ tbsp of salt, black pepper, and crushed red pepper
- Add the cabernet and mix together (mix mix mix)
- In a mixing bowl, Chop the italian sausage into one inch round chunks, and add into the bowl.
- Slice the bell peppers and onions into thin strips and add into the bowl.
- Cut your garlic clovers into thin slivers and add to the bowl.
- Season the sausage mixture with a ½ tbsp of salt, pepper, tomato paste and olive oil then mix until all pieces are evenly coated.
- Add the contents of the bowl into the baking dish, Mix it all together and cover tightly with aluminum foil.
- Put the baking dish into the oven at 315F for two – two and a half hours.
- Remove the foil, add ripped basil on top of the sauce
- Put the baking dish back into the oven uncovered at 375F for 15-20 minutes.
- While the sauce is baking boil your fettuccine until al dente.
- Once done, Add the fettuccine to a serving bowl and pour the sauce over top, and mix together.
- You should have enough extra sauce to serve some on the side when serving.
