Rinse the rice about three times until the water runs clear
To the rice cooker add: 2 cups of rice, 3 cups of water, 1 tbsp. of tomato bouillon powder, 1/2 packet of Sazon seasoning, and 1 tbsp. of butter. Click on the rice cooker and let it do it's thing! Once it's done cooking open the lid and fluff up and cover again until you are ready to serve.
In a skillet with high sides sauté onion, garlic, mini sweet peppers, Adobo seasoning, Sazon, and cracked black pepper in olive oil until golden
Add two cans of black beans (add the entire contents of the cans of beans). Bring to a boil
Add 2 tbsp. of white wine vinegar, 2 tbsp. of Sofrito, tomato sauce, and 1/2 a can of water. Bring to a boil.
Simmer on medium-low and stir occasionally for about 20 minutes or until the water evaporates and the beans become creamy but still a little juicy.
Taste for seasoning and add more if needed!
Now serve it up or pack it up and enjoy! =-)
