EASY Rice Cooker Rice & Beans

Melissa Jo

  • 2 cups of medium or long grain rice
  • 3 cups of water
  • 1 tbsp. of tomato bouillon pwder
  • 1/2 packet of sazon
  • 1-2 tbsp. of butter
  • 2 cans of beans add the entire contents of the can(15.25 oz cans)
  • 1 chopped small onion
  • 6 cloves of garlic chopped
  • 3-4 mini sweet peppers chopped any color
  • 1/2 packet of Sazon
  • 1 tbsp. of Adobo seasoning
  • cracked black pepper to taste
  • 2 tbsp. of jarred or fresh Sofrito
  • 2 tbsp. of white wine vinegar
  • 1/2 can full of water
  • 8 oz. can of tomato sauce

  • Rinse the rice about three times until the water runs clear
  • To the rice cooker add: 2 cups of rice, 3 cups of water, 1 tbsp. of tomato bouillon powder, 1/2 packet of Sazon seasoning, and 1 tbsp. of butter. Click on the rice cooker and let it do it’s thing! Once it’s done cooking open the lid and fluff up and cover again until you are ready to serve.
  • In a skillet with high sides sauté onion, garlic, mini sweet peppers, Adobo seasoning, Sazon, and cracked black pepper in olive oil until golden
  • Add two cans of black beans (add the entire contents of the cans of beans). Bring to a boil
  • Add 2 tbsp. of white wine vinegar, 2 tbsp. of Sofrito, tomato sauce, and 1/2 a can of water. Bring to a boil.
  • Simmer on medium-low and stir occasionally for about 20 minutes or until the water evaporates and the beans become creamy but still a little juicy.
  • Taste for seasoning and add more if needed!
  • Now serve it up or pack it up and enjoy! =-)

  • Rince the rice at least three times before cooking! This will result in fluffy rice. Just add the rice to the cooker and fill with water. Let it sit in the water a few minutes then drain out. Fill again and rinse until the water runs out mostly clear.
  • Also, with the rice my rule of thumb is adding half of the amount more of water in ratio to the rice when making rice. SO, if I add one cup of water; then I add 1 & 1/2 cups of water. Fluffy!
