EASY Rice Cooker Rice & Beans
I love my rice cooker and I use it when I need to make so many dishes especially EASY Rice Cooker rice and beans! This is my go-to dish when I have to work and my kids are home and are always looking for something to eat! I have this saved in a ziplock container for late night snacks, easy lunch, or even dinner sometimes! Affordable and DELICIOUS!

EASY Rice Cooker Rice & Beans
Rice Cooker Rice & Beans brings together medium or long grain rice, tomato bouillon pwder, and packet of sazon for a savory main course that feels extra special.
Ingredients
Method
- Rinse the rice about three times until the water runs clear
- To the rice cooker add: 2 cups of rice, 3 cups of water, 1 tbsp. of tomato bouillon powder, 1/2 packet of Sazon seasoning, and 1 tbsp. of butter. Click on the rice cooker and let it do it’s thing! Once it’s done cooking open the lid and fluff up and cover again until you are ready to serve.
- In a skillet with high sides sauté onion, garlic, mini sweet peppers, Adobo seasoning, Sazon, and cracked black pepper in olive oil until golden
- Add two cans of black beans (add the entire contents of the cans of beans). Bring to a boil
- Add 2 tbsp. of white wine vinegar, 2 tbsp. of Sofrito, tomato sauce, and 1/2 a can of water. Bring to a boil.
- Simmer on medium-low and stir occasionally for about 20 minutes or until the water evaporates and the beans become creamy but still a little juicy.
- Taste for seasoning and add more if needed!
- Now serve it up or pack it up and enjoy! =-)

Notes

- Rince the rice at least three times before cooking! This will result in fluffy rice. Just add the rice to the cooker and fill with water. Let it sit in the water a few minutes then drain out. Fill again and rinse until the water runs out mostly clear.
- Also, with the rice my rule of thumb is adding half of the amount more of water in ratio to the rice when making rice. SO, if I add one cup of water; then I add 1 & 1/2 cups of water. Fluffy!
