Slice the apples and add them into a large bowl.
In the bowl add lemon juice, sugar, flour, cinnamon, nutmeg, ginger, butter, and
mix everything together until incorporated.
Leave pie crusts out for 30 minutes to thaw out,
then flour (about 3-4 tbsp of flour) your board and roll the dough out a little bit.
Add one dough to your pie dish and
add your apple mixture in.
Then lay the second dough over top of the apples,
pinch the doughs together at the ends,
and make a slit in the top.
Brush the entire top of the pie with the egg yolk and
sprinkle sugar over the top (about 1 tsp).
Bake at 400°F for 1 hour,
if the top starts browning early, put tinfoil loosely over the top halfway through cooking.
Serve with ice cream or whipped cream.
