Cheez-y Broccoli Chicken and Rice Casserole

Easy weeknight comforting fall meal, the classic broccoli cheese and rice casserole. I made this Cheez-y Broccoli Chicken and Rice Casserole recipe to help families with busy weeknights.So I used a rotisserie chicken in this recipe. However, feel free to cook and shred/chop your own chicken to add to the casserole. Another time saving tip is using frozen broccoli. The benefit of using frozen broccoli is that it is already blanched and ready to go. If you use fresh broccoli make sure to blanch the broccoli first. (Blanched: scalding vegetables in boiling water or steam for a short time.This deactivates these enzymes so the peak quality is preserved).

Ingredients
  

  • 1 rotisserie chicken chopped
  • 1 ¼ cups uncooked long grain rice
  • 2-3 cups frozen broccoli florets defrosted & cut into smaller pieces
  • 1 cup freshly shredded colby jack
  • 1 cup freshly shredded sharp cheddar
  • 10.5 oz can condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups hot water
  • 2 ½ tsp better than bouillon roasted chicken base
  • 4 tbsp butter melted
  • 2 cups Cheez-Its crushed up
  • 2 tsp garlic powder
  • 1 tsp Tony’s Creole seasoning
  • 1 tsp italian seasoning
  • 1 tsp cracked black pepper
  • ½ tsp salt

Method
 

  1. Cook your rice according to package directions.
  2. Spray a 9x13 baking dish with cooking spray.
  3. Then add in the chopped rotisserie chicken, broccoli, cooked rice, and salt & pepper.
  4. In a large bowl add in the hot water and the better than bouillon. Stir that together until fully combined.
  5. Then in that same bowl, add in the cream of chicken soup, milk, sour cream, Tonys seasoning, garlic powder, italian seasoning, and the shredded cheddar cheese.
  6. Whisk that together until everything is fully combined.
  7. Pour that creamy sauce over the baking dish and give everything a stir until fully incorporated.
  8. Then sprinkle over the shredded colby jack.
  9. Bake that in the oven at 350°F for 30 minutes.
  10. While that's cooking, In a bowl combine the crushed Cheez-Its and the melted butter until combined.
  11. Once it has been baking for 30 minutes, take it out, and evenly sprinkle over the buttery crushed up Cheez-Its.
  12. Then place it back in the oven and let it cook for an additional 5-10 minutes.
  13. Let it set for 5 minutes before serving. Make it!
