The benefit of using frozen broccoli is that it is already blanched and ready to go. If you use fresh broccoli make sure to blanch the broccoli first. Ingredients
  

  • 1 rotisserie chicken chopped
  • 1 ¼ cups uncooked long grain rice
  • 2-3 cups frozen broccoli florets defrosted & cut into smaller pieces
  • 1 cup freshly shredded colby jack
  • 1 cup freshly shredded sharp cheddar
  • 10.5 oz can condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups hot water
  • 2 ½ tsp better than bouillon roasted chicken base
  • 4 tbsp butter melted
  • 2 cups Cheez-Its crushed up
  • 2 tsp garlic powder
  • 1 tsp Tony’s Creole seasoning
  • 1 tsp italian seasoning
  • 1 tsp cracked black pepper
  • ½ tsp salt

Instructions
 

  • Cook your rice according to package directions.
  • Spray a 9×13 baking dish with cooking spray.
  • Then add in the chopped rotisserie chicken, broccoli, cooked rice, and salt & pepper.
  • In a large bowl add in the hot water and the better than bouillon. Stir that together until fully combined.
  • Then in that same bowl, add in the cream of chicken soup, milk, sour cream, Tonys seasoning, garlic powder, italian seasoning, and the shredded cheddar cheese.
  • Whisk that together until everything is fully combined.
  • Pour that creamy sauce over the baking dish and give everything a stir until fully incorporated.
  • Then sprinkle over the shredded colby jack.
  • Bake that in the oven at 350°F for 30 minutes.
  • While that’s cooking, In a bowl combine the crushed Cheez-Its and the melted butter until combined.
  • Once it has been baking for 30 minutes, take it out, and evenly sprinkle over the buttery crushed up Cheez-Its.
  • Then place it back in the oven and let it cook for an additional 5-10 minutes.
  • Let it set for 5 minutes before serving. Make it!

    We all loved it. The next time I make it I am going to try substituting the Cheez-Its with Bread Crumbs. The Cheez-Its was the only part my kids thought was “weird” LOL! But they both went back for seconds!!!
