Do you love buffalo chicken dip? Do you love buffalo chicken wings? Well have no fear you're going to absolutely love my buffalo chicken dinner! Made with chicken breast, hot sauce, seasonings, cream cheese, and a few more simple ingredients all made in the crockpot! I made this and served it on sandwiches, but if you want to make this recipe low carb or keto you can serve it on a low carb tortilla, a bell pepper, or wrap it in lettuce. No matter how you serve it, the whole family is going to love it! Make it!!
To the crockpot add in chicken breasts, tony's creole seasoning, ranch seasoning, cream cheese, franks hot sauce, ranch dressing, butter, and the green onion whites.
Pop the lid on and set the crockpot to high for 3-4 hours. Once the chicken is done shred it up.
On a baking sheet with a rack take the brioche buns and spread about a tbsp of softened butter and a sprinkle of garlic salt on each roll.
Bake the buns at 425°F until they get toasty.
Set the top buns to the side and place the shredded buffalo chicken on the bottom buns. Top the chicken with green onions, pickle chips, and either blue cheese crumbles or shredded colby jack. Place that back in the oven at 425°F just until the cheese gets melty.
Once the cheese is melty, take them out of the oven and top the sandwiches with the top bun.
