I made this and served it on sandwiches, but if you want to make this recipe low carb or keto you can serve it on a low carb tortilla, a bell pepper, or wrap it in lettuce. No matter how you serve it, the whole family is going to love it! Make it!!

I am making these sandwiches with two different cheese options. Not everyone is a fan of blue cheese, even though that is my favorite. I used shredded Colby Jack cheese for this crockpot chicken buffalo sandwich for it’s smooth mild flavor, this one is my son’s favorite.

Ingredients
  

  • 2-3 chicken breasts
  • 2 tbsp butter
  • ½ cup marie’s ranch dressings
  • 4 oz cream cheese
  • 2/3 cup frank’s redhot sauce
  • 2 tsp tony’s creole seasoning
  • ½ a packet hidden valley ranch seasoning
  • ¼ cup whites of green onions chopped
  • 4-6 brioche buns
  • Softened butter
  • Garlic salt
  • Green onions
  • Dill pickle chips
  • Crumbled blue cheese
  • Shredded colby jack

Instructions
 

  • To the crockpot add in chicken breasts, tony’s creole seasoning, ranch seasoning, cream cheese, franks hot sauce, ranch dressing, butter, and the green onion whites.
  • Pop the lid on and set the crockpot to high for 3-4 hours. Once the chicken is done shred it up.
  • On a baking sheet with a rack take the brioche buns and spread about a tbsp of softened butter and a sprinkle of garlic salt on each roll.
  • Bake the buns at 425°F until they get toasty.
  • Set the top buns to the side and place the shredded buffalo chicken on the bottom buns. Top the chicken with green onions, pickle chips, and either blue cheese crumbles or shredded colby jack. Place that back in the oven at 425°F just until the cheese gets melty.
  • Once the cheese is melty, take them out of the oven and top the sandwiches with the top bun.
