Crockpot Honey Chipotle Chicken

My kids are always asking me to get Chipotle, so I thought why not make it at home! I made them homemade Chipotle bowls and the chicken was gone immediately, they absolutely loved this recipe! This honey chipotle chicken is made in the crockpot and requires little to no effort. My kids assembled there own chipotle bowls by layering the juicy chicken over white rice and spooning some more of that delicious sauce over the top. They customized their bowls with multiple toppings like black beans, corn, lettuce, cheese, sour cream, avocados, and cilantro. Ingredients
  

  • 3 chicken breasts
  • 1 small white onion chopped
  • 2-3 garlic cloves chopped
  • 8 oz can tomato sauce
  • 1/4 cup honey
  • Juice of 1 lime
  • 2 tsp Adobo seasoning
  • 1 tsp cracked black pepper divided
  • 1/2 tsp salt
  • 3 tsp Adobo sauce from a can of Chipotles en Adobo
  • 2 chipotle peppers from a can of Chipotles en Adobo chopped

Instructions
 

  • Place the chicken breasts in the crockpot and season them with Adobo seasoning and a 1/2 tsp of cracked black pepper.
  • Then add in the tomato sauce, onions, garlic, lime juice, Adobo sauce, chipotle peppers, honey, salt, & a 1/2 tsp cracked black pepper.
  • Stir everything together.
  • Cook on high for 4 hours or on low for 6-8 hours.
  • To make the chipotle bowl layer: rice first, then beans, chipotle chicken, lettuce, cheese, sour cream, and avocados. Enjoy!!
