Spread both packages of Boursin Garlic & Fine Herbs cheese evenly over a large, flat dinner plate, getting close to the edges.
Spoon the entire jar of fig spread over the Boursin cheese and spread it evenly, leaving a small white border if desired.
Drizzle the hot honey evenly over the fig spread.
Using whole, shelled pistachios, begin outlining the witch’s hat. Start with the bottom brim, creating a wide, slightly curved line with the ends turned upward.
Continue arranging whole pistachios to form the pointed top of the witch’s hat, curving the point slightly to one side.
Cut the dried apricots into small squares. Arrange them in a line across the hat, just above the brim, leaving a space in the center for the buckle.
Cut a small square from a slice of white provolone cheese. Carefully cut a smaller square out of the center to create a buckle.
Place the provolone buckle in the center of the apricot hatband, leaving the fig spread visible through the opening.
Finely chop a handful of the remaining shelled pistachios using a knife.
Carefully sprinkle the chopped pistachios inside the witch’s hat outline, filling in the pointed top and bottom brim. Work around the apricot hatband and provolone buckle, leaving the center of the buckle uncovered.
Add additional chopped pistachios as needed until the hat is filled in. Adjust the outline with whole pistachios if necessary.
Serve immediately with your favorite crackers and enjoy!
