EASY Pineapple Cake

Pineapple Cake is all about all purpose flour, sugar, and eggs in a simple sweet treat with big flavor.

Ingredients
  

  • 2 cups of all purpose flour
  • 2 cups of sugar
  • 2 eggs
  • 2 tsp. of baking soda
  • 20 oz. can of crushed pineapple

Method
 

  1. Preheat the oven to 350
  2. In a large bowl combine flour, sugar, baking soda (whisk)
  3. add the eggs & the entire can of pineapple (including the liquid)
  4. mix until incorporated (with a spoon)
  5. spray a 9x13 baking dish lightly with a nonstick spray
  6. add the batter into the baking dish
  7. bake at 350 for 40-45 minutes (or until toothpick comes out clean)
  8. cool for 20-30 minutes
  9. serve with a delicious cream cheese frosting and garnish with a maraschino cherry

Notes

  • Pantry Staples: Not only is this cake bakery quality, you can make it with simple pantry ingredients including:
    • all purpose flour
    • sugar
    • baking soda
    • 20 oz. can of crushed pineapple
    • 2 eggs
  • Baking Dish: I lightly grease the baking dish with a nonstick spray. The cake is so moist it will come out of the pan nicely even if you don't spray or grease the baking dish. However, I like to spray for clean up purposes. It's much easier to wash the baking dish with a little nonstick spray. I use Baker's Joy.
