Easy Turkey Burrito Bake

This dish has a ton of delicious ingredients to make it perfect, Starting with what's in it, It has ground turkey which is so delicious in a burrito. Even I was surprised at how perfect it tasted. The enchilada sauce is so perfect when it's on top of the burrito. I also put cream cheese in it which may sound weird, But it it so good in it. I put garlic, onions, taco seasonings, black beans, I mean what more can you ask for in a burrito. For what I topped it with, I put tomatoes, Sour Cream, and Guacamole on top of the burrito. That right there is what you call a perfect Turkey Bake Burrito. Try it for yourselves and let me know how you like it by leaving a comment on this post or you can send me a DM on Instagram!
Servings 8 people

Ingredients

  • 1 lb ground turkey
  • 1 small onion chopped
  • 6-7 garlic cloves chopped
  • 1 tomato chopped
  • 28 oz can red enchilada sauce divided
  • 6 oz whipped cream cheese
  • 1/2 a 15.5 oz can black beans rinsed & drained
  • 10 oz freshly shredded cheddar or colby jack
  • 2 tbsp taco seasoning
  • 1 tsp cracked black pepper
  • 2-3 tbsp vegetable oil
  • 6 burrito sized flour tortillas

Instructions

  • In a pan with oil, add in onions, garlic, cracked black pepper, taco seasoning, and sauté for a few minutes until translucent.
  • Add in turkey and saute until browned. Then add in 1 & 1/4 cup enchilada sauce and give that a stir. Let that simmer for about 5 minutes.
  • Then stir in the black beans and whipped cream cheese. Bring the pan to a boil, then lower it to a simmer, so it can reduce for about 5-10 minutes.
  • In a 9x13 baking dish pour a layer of enchilada sauce just to cover the bottom.
  • To fill your burrito, take your tortilla and add the ground turkey mixture to the middle, then the tomatoes, and some of the shredded cheese. Fold up your burrito and place it seal side down in the baking dish on top of the enchilada sauce. Repeat this process with the rest of the tortillas.
  • Pour more enchilada sauce all over the top of the burritos (as much as you like). Then sprinkle the remaining shredded cheese over the top. Bake at 350°F for 30-35 minutes. ENJOY!
