Easy Turkey Burrito Bake
Ingredients
- 1 lb ground turkey
- 1 small onion chopped
- 6-7 garlic cloves chopped
- 1 tomato chopped
- 28 oz can red enchilada sauce divided
- 6 oz whipped cream cheese
- 1/2 a 15.5 oz can black beans rinsed & drained
- 10 oz freshly shredded cheddar or colby jack
- 2 tbsp taco seasoning
- 1 tsp cracked black pepper
- 2-3 tbsp vegetable oil
- 6 burrito sized flour tortillas
Instructions
- In a pan with oil, add in onions, garlic, cracked black pepper, taco seasoning, and sauté for a few minutes until translucent.
- Add in turkey and saute until browned. Then add in 1 & 1/4 cup enchilada sauce and give that a stir. Let that simmer for about 5 minutes.
- Then stir in the black beans and whipped cream cheese. Bring the pan to a boil, then lower it to a simmer, so it can reduce for about 5-10 minutes.
- In a 9×13 baking dish pour a layer of enchilada sauce just to cover the bottom.
- To fill your burrito, take your tortilla and add the ground turkey mixture to the middle, then the tomatoes, and some of the shredded cheese. Fold up your burrito and place it seal side down in the baking dish on top of the enchilada sauce. Repeat this process with the rest of the tortillas.
- Pour more enchilada sauce all over the top of the burritos (as much as you like). Then sprinkle the remaining shredded cheese over the top. Bake at 350°F for 30-35 minutes. ENJOY!
