As a Florida native living in the home of the orange, I've used oranges in countless recipes! I must say one of my absolute favorites is this recipe, hence the name Florida orange salmon! Salmon is such a healthy and deliciously easy fish to make for dinner, so why not give it a little florida zest! Now, there's nothing difficult about making this recipe, but the fresh citrusy taste is going to keep you coming back to make it time and time again. So no matter where you live grab yourself some Florida oranges and let's make it!

Ingredients

  • 3 - 4 salmon filets
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp dried parsley
  • ¼ tsp cayenne
  • Salt & cracked black pepper to taste
  • 1 large orange sliced in rounds
  • 1 shallot sliced
  • ¼ cup olive oil
  • cup orange juice
  • 1 ½ tbsp soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tbsp + 1 tsp brown sugar
  • 2 tbsp fresh parsley chopped
  • 3 - 4 garlic cloves chopped
  • Zest of 1 clementine or orange
  • ½ tbsp honey per salmon

Method

  1. Season both sides of your salmon with onion powder, garlic powder, paprika, dried parsley, cayenne, and salt & pepper.
  2. In a baking dish evenly spread out the orange rounds and sliced shallots. Add the seasoned salmon filets on top of the orange rounds and shallots. Set that aside.
  3. In a measuring cup combine olive oil, orange juice, soy sauce, rice vinegar, brown sugar, fresh parsley, garlic, orange or clementine zest, salt & pepper, and mix that together.
  4. Add the honey on top of each salmon filet. Pour the marinade evenly over the salmon and let that marinate for at least 30 minutes.
  5. Then place the salmon in the oven at 400°F for 15 - 20 minutes. Serve over mashed potatoes or rice. Enjoy!!
