Greek Tomato Table Salad

It was the most simple yet fresh, incredible salad. We shared it and I thought to myself I could eat this all summer long. So now I'm recreating it for you introducing Greek Tomato Table Salad. And incidentally there is enough dressing to sop up your fresh bread on the summer dinner nights. This recipe starts with fresh ingredients such as Campari Tomatoes, Cute-cumber, Green Bell Peppers, Red Onion, and Feta Cheese. It has the most incredibly simple but yet perfect Red Wine Vinaigrette. Are you ready for your new summer salad? Let's make it.

Ingredients
  

  • 2 lb of campari tomatoes quarter
  • 1 cucumber sliced into quarters
  • Quarter of a red onion sliced thin
  • 1 green bell pepper sliced into thin strips
  • 6 oz of Feta cheese

Dressing:

  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 minced shallot
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp granulated sugar
  • 1 tsp dried oregano

Optional:

  • 1/4 cup capers and or Kalamata olives over the feta cheese

Instructions
 

  • Add everything to a small bowl or mason jar.
  • Add red wine vinegar, olive oil, minced shallots, salt, pepper, granulated sugar, dried oregano to a cup
  • Whisk or shake until it emulsifies (it’ll go from separated to slightly creamy looking).
  • Taste and adjust — more sugar if it’s too sharp, more vinegar if you want more zing.
