Honey Lime Chicken and Orzo

Easy and Delicious is exactly what the doctor ordered today, We've got a delicious Honey Lime Chicken made in my Cast Iron Skillet. This dish is absolutely delicious and have so much flavor you're going to freak out. This dish is cooked to perfection with both sides of the chicken being browned to give off that extra char flavor. The honey and lime combination on the chicken makes for a perfect stand off with your tastebuds. But let's get into how it's made!

Ingredients
  

  • 1.5-2 lbs of boneless skinless chicken thighs
  • Seasoning for chicken: 2 tsp Adobo seasoning 1 tsp chili powder, 1 tsp paprika, 1 tsp of salt, 1 tsp of black pepper
  • Marinade: Juice of 4 limes 2 tbsp of vinegar 1/4 cup of olive oil, 1/2 cup of honey, 5-6 cloves of chopped garlic, 1 tsp of salt, 1 tsp of black pepper, 1/2 tsp of crushed red pepper
  • 1/2 chopped red onion
  • 2 tbsp of chopped fresh garlic
  • 2 tbsp of chopped cilantro
  • 1/2 tsp crushed red pepper
  • 2 cups of orzo
  • juice of 1 lime
  • 1/2 cup of honey
  • 3 & 1/2 cups of chicken stock
  • 2 tbsp olive oil

Instructions
 

  • In bowl add chicken thighs and season them with the seasonings listed above.
  • In a measuring cup make the marinade by combining the marinade ingredients listed above. Pour the marinade into the bowl over the chicken. Let that marinate for 1 hour.
  • In a pan with 2 tbsp olive oil add the chicken and brown it for 5 minutes on each side.
  • Once the chicken is browned, remove from the pan, and set the chicken aside.
  • In the SAME pan add red onions, garlic, cilantro, crushed red pepper, a little bit more olive oil, and sauté that for a few minutes until translucent.
  • Add in orzo and sauté for a few minutes until the orzo is slightly toasty (keep the orzo moving so it doesn't burn!).
  • Then add chicken stock, honey, the juice of 1 lime, and give that a stir. Add chicken back to the pan. Bring the pan to a boil, pop the lid on, lower it to a simmer, and let that cook for about 20 minutes or until the orzo is al dente. Enjoy!
