Honey Lime Chicken and Orzo
Equipment
Ingredients
- 1.5-2 lbs of boneless skinless chicken thighs
- Seasoning for chicken: 2 tsp Adobo seasoning 1 tsp chili powder, 1 tsp paprika, 1 tsp of salt, 1 tsp of black pepper
- Marinade: Juice of 4 limes 2 tbsp of vinegar 1/4 cup of olive oil, 1/2 cup of honey, 5-6 cloves of chopped garlic, 1 tsp of salt, 1 tsp of black pepper, 1/2 tsp of crushed red pepper
- 1/2 chopped red onion
- 2 tbsp of chopped fresh garlic
- 2 tbsp of chopped cilantro
- 1/2 tsp crushed red pepper
- 2 cups of orzo
- juice of 1 lime
- 1/2 cup of honey
- 3 & 1/2 cups of chicken stock
- 2 tbsp olive oil
Instructions
- In bowl add chicken thighs and season them with the seasonings listed above.
- In a measuring cup make the marinade by combining the marinade ingredients listed above. Pour the marinade into the bowl over the chicken. Let that marinate for 1 hour.
- In a pan with 2 tbsp olive oil add the chicken and brown it for 5 minutes on each side.
- Once the chicken is browned, remove from the pan, and set the chicken aside.
- In the SAME pan add red onions, garlic, cilantro, crushed red pepper, a little bit more olive oil, and sauté that for a few minutes until translucent.
- Add in orzo and sauté for a few minutes until the orzo is slightly toasty (keep the orzo moving so it doesn’t burn!).
- Then add chicken stock, honey, the juice of 1 lime, and give that a stir. Add chicken back to the pan. Bring the pan to a boil, pop the lid on, lower it to a simmer, and let that cook for about 20 minutes or until the orzo is al dente. Enjoy!
