You've had shepherd's pie, you might have even already had meatloaf casserole, but have you had Meatloaf Lasagna? The way I layered the beefy meatloaf mixture with cheese, mashed potatoes, green onions, and bacon made me think of my lasagna recipe, but less Italian and more cozy comforting delicious! It's the dinner you never knew you needed, but once you try it, it will probably make your dinner rotation week after week. Fresh ingredients such as ground beef, green onions, milk, eggs, and cheese along with some pantry staples, were ready to get to layering. Are you ready? Let's make it!
Place the slices of bacon on a baking sheet and bake them in the oven at 400°F until as crispy as you want them to be. Once it's done, crumble up the crispy bacon into bacon bits.
In a large bowl, add ground chuck, onion, garlic, milk, egg, grated pecorino romano, italian breadcrumbs, fresh parsley, beefy onion soup mix, worcestershire, garlic powder, cracked black pepper, and salt. Mix that together until combined, but DON'T OVERMIX IT!!
Microwave the mashed potatoes according to package directions. Set them aside.
Grease a 9x13 baking dish with cooking spray and add in the meatloaf mixture. Press the meat into the baking dish until smooth and even. Sprinkle 1 cup of the shredded cheddar cheese evenly over the meat. Now, add dollops of the mashed potatoes all over the top of the cheese and smooth it out into an even layer. Then, evenly sprinkle over 1 cup of shredded cheddar cheese over the layer of mashed potatoes. Lastly, sprinkle the sliced green onions and crispy bacon bits evenly over the top.
Bake in the oven at 375°F for 35 - 40 minutes. Enjoy!
