Method
- Place the slices of bacon on a baking sheet and bake them in the oven at 400°F until as crispy as you want them to be. Once it's done, crumble up the crispy bacon into bacon bits.
- In a large bowl, add ground chuck, onion, garlic, milk, egg, grated pecorino romano, italian breadcrumbs, fresh parsley, beefy onion soup mix, worcestershire, garlic powder, cracked black pepper, and salt. Mix that together until combined, but DON'T OVERMIX IT!!
- Microwave the mashed potatoes according to package directions. Set them aside.
- Grease a 9x13 baking dish with cooking spray and add in the meatloaf mixture. Press the meat into the baking dish until smooth and even. Sprinkle 1 cup of the shredded cheddar cheese evenly over the meat. Now, add dollops of the mashed potatoes all over the top of the cheese and smooth it out into an even layer. Then, evenly sprinkle over 1 cup of shredded cheddar cheese over the layer of mashed potatoes. Lastly, sprinkle the sliced green onions and crispy bacon bits evenly over the top.
- Bake in the oven at 375°F for 35 - 40 minutes. Enjoy!
