Meatloaf Lasagna
Ingredients
- 6 – 7 slices of bacon optional
- 1.5 lbs ground chuck
- 1 small white onion chopped
- 1 heaping tbsp minced garlic
- ½ cup milk
- 1 egg
- ½ cup grated pecorino romano
- 1 cup italian breadcrumbs
- ¼ cup chopped fresh parsley
- 1 envelope of Lipton beefy onion soup mix
- 2 tbsp worcestershire
- 1 tsp garlic powder
- 1 tsp cracked black pepper
- ½ tsp salt
- 32 oz Bob Evans family sized mashed potatoes
- 2 cups shredded cheddar cheese divided
- 4 – 5 stalks of green onions sliced (optional)
Instructions
- Place the slices of bacon on a baking sheet and bake them in the oven at 400°F until as crispy as you want them to be. Once it’s done, crumble up the crispy bacon into bacon bits.
- In a large bowl, add ground chuck, onion, garlic, milk, egg, grated pecorino romano, italian breadcrumbs, fresh parsley, beefy onion soup mix, worcestershire, garlic powder, cracked black pepper, and salt. Mix that together until combined, but DON’T OVERMIX IT!!
- Microwave the mashed potatoes according to package directions. Set them aside.
- Grease a 9×13 baking dish with cooking spray and add in the meatloaf mixture. Press the meat into the baking dish until smooth and even. Sprinkle 1 cup of the shredded cheddar cheese evenly over the meat. Now, add dollops of the mashed potatoes all over the top of the cheese and smooth it out into an even layer. Then, evenly sprinkle over 1 cup of shredded cheddar cheese over the layer of mashed potatoes. Lastly, sprinkle the sliced green onions and crispy bacon bits evenly over the top.
- Bake in the oven at 375°F for 35 – 40 minutes. Enjoy!
I’ve been looking forward to trying this since I saw the recipe. I’m stuck at the house with bad weather, and just so happen to have all these ingredients (except the optional bacon). My family is standing in the kitchen waiting for it to be done🤣. Can’t wait to eat! Your recipes never fail, my fam appreciates your creativity!
