Method
Prepare the Chicken:
- Pat the chicken cutlets dry and ensure they are at room temperature.
- If using chicken breasts, butterfly them and pound them to a thin evenness.
- Season the chicken with salt, pepper, and garlic powder.
- Dredge the chicken in flour, shaking off the excess. Set aside.
Sear the Chicken:
- Heat an oven-safe skillet over medium-high heat.
- Add olive oil and 1 tbsp of butter to the skillet.
- Brown the chicken on each side for about 5 minutes or until golden brown.
- Once cooked, transfer the chicken to a plate and set aside.
Sauté the Mushrooms and Aromatics:
- In the same skillet, add another tbsp of butter and the sliced mushrooms and sprinkle with salt.
- Sauté until the mushrooms are just soft.
- Add the sliced onions and chopped garlic, and sauté until golden brown.
- Season with salt, pepper, and thyme & crushed red pepper.
Combine and Bake:
- Pour in the white wine and chicken stock, allowing the alcohol to burn our and simmer on medium-low to let the flavors to meld & thicken a bit.
- Return the seared chicken to the skillet, along with any accumulated juices.
- Spoon the mushroom mixture over the chicken to smother it.
Add Cheese and Bake:
- Place 2 slices of fresh mozzarella on top of each chicken breast.
- Sprinkle grated pecorino romano cheese over the chicken.
Bake to Perfection:
- Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
- Place the skillet in the oven and cook, uncovered, until the cheese is melted and slightly browned.
Serve and Garnish:
- Remove the skillet from the oven and garnish with fresh parsley.
- Serve the Mushroom Cheese & Chicken Skillet hot and enjoy!
