Mushroom & Cheese Chicken Skillet Recipe

Ingredients
  

  • 3-4 chicken cutlets or chicken scallopini
  • 1 tsp of garlic powder
  • Salt and pepper to taste
  • About 1/2 cup of flour I recommend using Wondra
  • 1 tbsp of olive oil
  • 2 tbsp of butter divided
  • 12 oz. of sliced white mushrooms
  • 1 tsp of thyme
  • 1/4 tsp of crushed red pepper
  • 1 sliced white onion
  • 5 cloves of chopped garlic
  • 1/2 cup of white wine
  • 1/4 cup of chicken stock
  • Sliced fresh mozzarella cheese 2 slices per chicken breast
  • About 4 tbsp of grated pecorino romano cheese
  • Fresh parsley for garnish

Method
 

Prepare the Chicken:
  1. Pat the chicken cutlets dry and ensure they are at room temperature.
  2. If using chicken breasts, butterfly them and pound them to a thin evenness.
  3. Season the chicken with salt, pepper, and garlic powder.
  4. Dredge the chicken in flour, shaking off the excess. Set aside.
Sear the Chicken:
  1. Heat an oven-safe skillet over medium-high heat.
  2. Add olive oil and 1 tbsp of butter to the skillet.
  3. Brown the chicken on each side for about 5 minutes or until golden brown.
  4. Once cooked, transfer the chicken to a plate and set aside.
Sauté the Mushrooms and Aromatics:
  1. In the same skillet, add another tbsp of butter and the sliced mushrooms and sprinkle with salt.
  2. Sauté until the mushrooms are just soft.
  3. Add the sliced onions and chopped garlic, and sauté until golden brown.
  4. Season with salt, pepper, and thyme & crushed red pepper.
Combine and Bake:
  1. Pour in the white wine and chicken stock, allowing the alcohol to burn our and simmer on medium-low to let the flavors to meld & thicken a bit.
  2. Return the seared chicken to the skillet, along with any accumulated juices.
  3. Spoon the mushroom mixture over the chicken to smother it.
Add Cheese and Bake:
  1. Place 2 slices of fresh mozzarella on top of each chicken breast.
  2. Sprinkle grated pecorino romano cheese over the chicken.
Bake to Perfection:
  1. Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Place the skillet in the oven and cook, uncovered, until the cheese is melted and slightly browned.
Serve and Garnish:
  1. Remove the skillet from the oven and garnish with fresh parsley.
  2. Serve the Mushroom Cheese & Chicken Skillet hot and enjoy!
