Mushroom & Cheese Chicken Skillet Recipe

Ingredients
  

  • 3-4 chicken cutlets or chicken scallopini
  • 1 tsp of garlic powder
  • Salt and pepper to taste
  • About 1/2 cup of flour I recommend using Wondra
  • 1 tbsp of olive oil
  • 2 tbsp of butter divided
  • 12 oz. of sliced white mushrooms
  • 1 tsp of thyme
  • 1/4 tsp of crushed red pepper
  • 1 sliced white onion
  • 5 cloves of chopped garlic
  • 1/2 cup of white wine
  • 1/4 cup of chicken stock
  • Sliced fresh mozzarella cheese 2 slices per chicken breast
  • About 4 tbsp of grated pecorino romano cheese
  • Fresh parsley for garnish

Instructions
 

Prepare the Chicken:

  • Pat the chicken cutlets dry and ensure they are at room temperature.
  • If using chicken breasts, butterfly them and pound them to a thin evenness.
  • Season the chicken with salt, pepper, and garlic powder.
  • Dredge the chicken in flour, shaking off the excess. Set aside.

Sear the Chicken:

  • Heat an oven-safe skillet over medium-high heat.
  • Add olive oil and 1 tbsp of butter to the skillet.
  • Brown the chicken on each side for about 5 minutes or until golden brown.
  • Once cooked, transfer the chicken to a plate and set aside.

Sauté the Mushrooms and Aromatics:

  • In the same skillet, add another tbsp of butter and the sliced mushrooms and sprinkle with salt.
  • Sauté until the mushrooms are just soft.
  • Add the sliced onions and chopped garlic, and sauté until golden brown.
  • Season with salt, pepper, and thyme & crushed red pepper.

Combine and Bake:

  • Pour in the white wine and chicken stock, allowing the alcohol to burn our and simmer on medium-low to let the flavors to meld & thicken a bit.
  • Return the seared chicken to the skillet, along with any accumulated juices.
  • Spoon the mushroom mixture over the chicken to smother it.

Add Cheese and Bake:

  • Place 2 slices of fresh mozzarella on top of each chicken breast.
  • Sprinkle grated pecorino romano cheese over the chicken.

Bake to Perfection:

  • Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • Place the skillet in the oven and cook, uncovered, until the cheese is melted and slightly browned.

Serve and Garnish:

  • Remove the skillet from the oven and garnish with fresh parsley.
  • Serve the Mushroom Cheese & Chicken Skillet hot and enjoy!

Notes

  • For extra tender chicken, make sure to pound it to an even thickness.
  • Wondra flour creates a light and crispy coating.
