One-Pan Sausage & Sun-Dried Tomato Rice for Two

This is one of those simple dinners that feels cozy and a little fancy, but it’s actually very easy to make. Everything cooks in one pan, and the sun-dried tomatoes add so much flavor. I love making meals like this in my Caraway sauté pan because it goes from stovetop to oven and makes cleanup really easy.

Ingredients
  

  • 1 Italian sausage link casing removed
  • ½ cup white rice
  • 1 clove garlic minced
  • ¼ cup sun-dried tomatoes squeezed dry and chopped
  • Salt to taste
  • Pepper to taste
  • Crushed red pepper flakes
  • 1 cup water

Method
 

  1. Preheat oven to 400°F.
  2. In a Caraway sauté pan over medium heat, crumble and brown the Italian sausage.
  3. Add the garlic and cook for about 30 seconds.
  4. Add the rice and sauté for 1–2 minutes to lightly toast the rice.
  5. Add salt, pepper, crushed red pepper, and sun-dried tomatoes and stir together.
  6. Pour in 1 cup of water and bring to a boil.
  7. Cover with the lid and transfer the pan to the oven.
  8. Bake for 20 minutes.
  9. Remove from oven, fluff the rice, and serve.

Notes

  • Toasting the rice before adding water adds extra flavor.
  • Make sure the sun-dried tomatoes are squeezed dry so the rice cooks properly.
  • Parmesan cheese on top is really good with this.
  • You can add spinach at the end for a little green.
  • Leftovers reheat really well the next day.
