Whisk together 2 eggs, 1 tablespoon of olive oil, salt pepper, and fresh parsley in a bowl. In another bowl, mix Panko, Italian breadcrumbs, and Pecorino Romano cheese.
Butterfly 2 chicken breasts, dip them in the egg mixture, then coat with breadcrumbs.
Heat olive oil over medium heat in a skillet.
Add smashed garlic cloves, fry chicken for 5 mins each side until golden. Remove garlic, add butter, fry 5 more mins.
Remove chicken, drain half the oil.
Pour in half the marinara sauce, return chicken to pan, add a heaping spoonful of sauce onto each cutlet.
Top with Pecorino Romano, parsley, basil leaves, crack black pepper, and mozzarella.
Bake at 400°F for 20 mins, then broil for 1 min until golden brown. Enjoy!
