Ingredients
  

  • 2 chicken breast butterflied
  • Salt and and cracked black pepper
  • 2 egg
  • 1/4 cup of fresh parsley
  • 1/4 of olive oil + 1 tablespoon divided
  • Breadcrumb mix
  • 1/2 cup of Panko
  • 1 1/2 cup of breadcrumbs
  • 1/4 cup of Pecorino Romano
  • 3 tablespoon of butter
  • 1 basil leaf
  • Fresh mozzarella
  • Garlic cloves
  • Marinara sauce

Equipment

Method
 

  1. Whisk together 2 eggs, 1 tablespoon of olive oil, salt pepper, and fresh parsley in a bowl. In another bowl, mix Panko, Italian breadcrumbs, and Pecorino Romano cheese.
  2. Butterfly 2 chicken breasts, dip them in the egg mixture, then coat with breadcrumbs.
  3. Heat olive oil over medium heat in a skillet.
  4. Add smashed garlic cloves, fry chicken for 5 mins each side until golden. Remove garlic, add butter, fry 5 more mins.
  5. Remove chicken, drain half the oil.
  6. Pour in half the marinara sauce, return chicken to pan, add a heaping spoonful of sauce onto each cutlet.
  7. Top with Pecorino Romano, parsley, basil leaves, crack black pepper, and mozzarella.
  8. Bake at 400°F for 20 mins, then broil for 1 min until golden brown. Enjoy!
