One Pot Chicken Parmesan 🍅
Equipment
- 1 One Pot
Ingredients
- 2 chicken breast butterflied
- Salt and and cracked black pepper
- 2 egg
- 1/4 cup of fresh parsley
- 1/4 of olive oil + 1 tablespoon divided
- Breadcrumb mix
- 1/2 cup of Panko
- 1 1/2 cup of breadcrumbs
- 1/4 cup of Pecorino Romano
- 3 tablespoon of butter
- 1 basil leaf
- Fresh mozzarella
- Garlic cloves
- Marinara sauce
Instructions
- Whisk together 2 eggs, 1 tablespoon of olive oil, salt pepper, and fresh parsley in a bowl. In another bowl, mix Panko, Italian breadcrumbs, and Pecorino Romano cheese.
- Butterfly 2 chicken breasts, dip them in the egg mixture, then coat with breadcrumbs.
- Heat olive oil over medium heat in a skillet.
- Add smashed garlic cloves, fry chicken for 5 mins each side until golden. Remove garlic, add butter, fry 5 more mins.
- Remove chicken, drain half the oil.
- Pour in half the marinara sauce, return chicken to pan, add a heaping spoonful of sauce onto each cutlet.
- Top with Pecorino Romano, parsley, basil leaves, crack black pepper, and mozzarella.
- Bake at 400°F for 20 mins, then broil for 1 min until golden brown. Enjoy!
