Add vegetable oil to a skillet along with the onion hunk, green onions, carrots, and smashed garlic. Sauté at medium heat for 5 minutes until fragrant and slightly golden.
Add in the rice and sauté the rice with veggies for about 5 minutes or until golden brown. Keep moving the rice in the pan with a wooden spoon so it doesn’t burn.
Then, add the tomato sauce, Sazon seasoning packet, black pepper, and chicken stock to the skillet. Bring that to a boil. Cover the skillet with aluminum foil and then cover with the lid over the foil. Lower the heat to low and simmer covered for about 35 - 40 minutes.
Remove from the heat. Fluff up the rice. Then cover again and leave covered off the heat for 15 minutes. Finally, uncover and fluff up again. Let it sit uncovered for another 15 minutes. Then, serve the best rice ever! Make it!
