Chicken pieces should be at room temperature and patted dry of any moisture
Add the olive oil and rub into the chicken
Add all of the dry seasonings and massage it into the chicken. Try to get it over every inch of the chicken even under the skin as much as possible
Arrange the chicken into the Pyrex or baking dish
Pour the sour orange marinade over the chicken
Give the dish a little shake and a tilt to spread the marinade in the dish evenly
Bake UNCOVERED at 375 for 45 minutes and then bake at 400 for 15 minutes (total cook time 1 hour)
Once the chicken is done remove from oven and add the minced garlic to the juices in the pan
Mix the garlic into the juices evenly and use a spoon to pour over the chicken
Put the chicken BACK into the hot oven but turn the oven OFF. The residual heat will be enough to heat up your garlic but not burn it. Leave it in for 10 minutes

a simple white rice works best because the juices that this dish created poured over the rice is divine
Vegetables:
A large beautiful tossed salad with mixed lettuce, red onions, radishes, cucumbers, tomatoes, and black olives. Toss with a simple red wine vinaigrette.
A side of broccoli steamed with some garlic butter drizzled over top is simple and delicious.
