Oven Roasted Garlic Chicken
This juicy oven roasted garlic chicken is SO easy and unbelievably delicious. The citrusy flavors from the seasoning baked to perfection so it’s juicy inside and browned and crispy outside. I am also spilling all the secrets for garlic chicken in the oven, so easy and requires a simple technique that you’ll use forever. NO burnt garlic and no need for the stovetop.
What you will need:

Skin-on Bone-in chicken drums and thighs: you can also cut up a whole chicken or have your butcher cut up for you.

Oven Roasted Garlic Chicken
Ingredients
- 2-3 lbs chicken drumsticks & thighs
- 1 tbsp olive oil
- 1 tbsp of Adobo
- 1 tsp of Mojo Rub
- 1 packet of Sazon
- 1 tbsp Cracked Black pepper
- 4-5 oz of Sour Orange Marinade
- 2-3 tbsp of minced garlic
Instructions
- Preheat oven to 375
- Chicken pieces should be at room temperature and patted dry of any moisture
- Add the olive oil and rub into the chicken
- Add all of the dry seasonings and massage it into the chicken. Try to get it over every inch of the chicken even under the skin as much as possible
- Arrange the chicken into the Pyrex or baking dish
- Pour the sour orange marinade over the chicken
- Give the dish a little shake and a tilt to spread the marinade in the dish evenly
- Bake UNCOVERED at 375 for 45 minutes and then bake at 400 for 15 minutes (total cook time 1 hour)
- Once the chicken is done remove from oven and add the minced garlic to the juices in the pan
- Mix the garlic into the juices evenly and use a spoon to pour over the chicken
- Put the chicken BACK into the hot oven but turn the oven OFF. The residual heat will be enough to heat up your garlic but not burn it. Leave it in for 10 minutes

A large beautiful tossed salad with mixed lettuce, red onions, radishes, cucumbers, tomatoes, and black olives. Toss with a simple red wine vinaigrette.
