Ingredients

  • 2 pounds ground beef
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1 packet 1 ounce taco seasoning
  • 1 can 14 ounces diced tomatoes, undrained
  • 1 can 4 ounces diced green chilies, undrained
  • Salt and pepper to taste
  • 1-2 cups of shredded cheddar cheese
  • Taco shells or tortillas
  • Toppings shredded cheese, lettuce, tomatoes, sour cream, etc.

Method

  1. In a skillet over medium heat, brown the ground beef, onions, chopped garlic, salt & pepper until fully cooked. Drain any excess fat.
  2. Transfer the cooked ground beef to the crockpot.
  3. Add the taco seasoning, diced tomatoes (with their juices), and diced green chilies (with their juices) to the crockpot. Stir well to combine.
  4. Season with salt and pepper according to your taste.
  5. Cover the crockpot and cook on low heat for 4-6 hours or on high heat for 2-3 hours, until the flavors are well combined and the mixture is heated through.
  6. Stir occasionally during cooking to prevent sticking or burning.
  7. 15 minutes before you are ready to serve add 1-2 cups of shredded cheddar to the crockpot, depending on how cheesy you want your tacos to. Once it melted, mix it in with the beef.
