The BEST EASY Crockpot Tacos

Ingredients
  

  • 2 pounds ground beef
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1 packet 1 ounce taco seasoning
  • 1 can 14 ounces diced tomatoes, undrained
  • 1 can 4 ounces diced green chilies, undrained
  • Salt and pepper to taste
  • 1-2 cups of shredded cheddar cheese
  • Taco shells or tortillas
  • Toppings shredded cheese, lettuce, tomatoes, sour cream, etc.

Instructions
 

  • In a skillet over medium heat, brown the ground beef, onions, chopped garlic, salt & pepper until fully cooked. Drain any excess fat.
  • Transfer the cooked ground beef to the crockpot.
  • Add the taco seasoning, diced tomatoes (with their juices), and diced green chilies (with their juices) to the crockpot. Stir well to combine.
  • Season with salt and pepper according to your taste.
  • Cover the crockpot and cook on low heat for 4-6 hours or on high heat for 2-3 hours, until the flavors are well combined and the mixture is heated through.
  • Stir occasionally during cooking to prevent sticking or burning.
  • 15 minutes before you are ready to serve add 1-2 cups of shredded cheddar to the crockpot, depending on how cheesy you want your tacos to. Once it melted, mix it in with the beef.
  • When ready to serve, heat the taco shells or tortillas according to package instructions.
  • Serve the crockpot taco mixture in the taco shells or tortillas and add your favorite toppings like shredded cheese, quartered limes, diced jalapenos, lettuce, tomatoes, and sour cream.
  • Enjoy your delicious crockpot ground beef tacos!
