BEST Stuffed Chicken Breast


Stuffed chicken breast…it’s what’s for dinner! The flavor combo is so good in this recipe! Fresh herbs, spinach, cheeses, and seasoning, along with a dollop or two of Pesto sauce! Just a little bit goes a long way! Stuff em, sear em, and pop em in the oven for about 15 minutes and you’ve got insanely good and easy dinner! I serve with a side of butter noodles and a steamed vegetable! This dish is so flavorful, no elaborate side dish needed! Time to Make it!

Best Stuffed Chicken Breast Recipe
Ingredients
- 3-4 chicken breasts
- 8 oz. of cream cheese
- 1/4 cup of chopped green onions or scallions
- 1/2 cup of fresh mozzarella cut into small cubes
- 1/8 cup of sun-dried tomatoes squeezed dry but save the oil separately
- 1 cup of chopped spinach
- 6 leaves of basil chopped
- 5-6 cloves of garlic chopped
- 2 tbsp. of pesto sauce
- 1/2 tablespoon of Italian seasoning
- Salt and pepper to taste
- 1 tablespoon of butter; 1 tbsp of olive oil

Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Slice each chicken breast horizontally at the thickest part, but not all the way through. Open up the chicken breasts like a book. Season inside and out with salt, pepper, and garlic powder.
- In a mixing bowl add: room temperature cream cheese, mozzarella, green onions, chopped spinach, sundried tomatoes, chopped garlic, fresh basil, pesto sauce, salt, pepper, and Italian seasoning. Mix it all tighter until combined. (It will look like a spinach dip)
- Stuff each chicken breast generously with the filling. Close the chicken up and seal with 3 toothpicks piercing the chicken breast diagonally.
- Once sealed, sprinkle paprika on each side of the stuffed chicken.
- Heat an oven-safe skillet on the stovetop over medium-high heat. Add a tablespoon of olive oil and one tablespoon of butter.
- Sear the stuffed chicken breasts in the skillet until they are browned on each side, approximately 3-5 minutes per side.
- Once browned, drizzle the oil from the sun-dried tomatoes jar over each chicken breast. About 1 tsp of oil per chicken breast.
- Place the skillet in the preheated oven and bake for about 15 minutes, or until the chicken is cooked through.
- Once done, remove the skillet from the oven and the toothpicks from the chicken breast! Allow the chicken to rest for a few minutes before serving.
- Serve the Stuffed Chicken with a side of buttered pasta, and a simple steamed vegetable like broccoli. Enjoy!
