Cast Iron Skillet Cornbread
Ingredients
- 2 boxes of Jiffy corn muffin mix
- 1 ¼ cup buttermilk
- 3 eggs
- 4 tbsp sugar
- 1 stick of butter for greasing the cast iron skillet
- 2 tbsp butter for the glaze
- 2 tbsp honey for the glaze
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the Jiffy corn muffin mix, buttermilk, eggs, and sugar. Stir until all the ingredients are well incorporated and the batter is smooth.
- Take your cast iron skillet and place the stick of butter in it. Put the skillet in the preheated oven for a few minutes until the butter melts completely.
- Once the butter has melted, carefully remove the skillet from the oven and tilt it to ensure the melted butter coats the entire surface of the skillet.
- Pour the prepared cornbread batter into the greased cast iron skillet. Make sure the batter is evenly distributed.
- Place the skillet back into the oven and bake for approximately 45 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
