Why Youโ€™ll Love These Crockpot Party Potatoes

  • Almost entirely hands-off:ย Throw everything into the crockpot, let it cook, and finish with a cheesy topping.
  • Perfect for Thanksgiving:ย Save that valuable oven space for your turkey, stuffing, and other holiday favorites.
  • Simple ingredients:ย Frozen diced potatoes, cheese, sour cream, and condensed soup transform into something absolutely delicious.
  • Extra cheesy:ย We use cheddar cheese in the potatoes AND on top.
  • Buttery, crispy topping:ย Toasted French-fried onions give these creamy potatoes the perfect crunchy finish.
  • Great for entertaining:ย This is the kind of side dish everyone goes back for seconds of.

What Makes My Crockpot Party Potatoes Different?

Traditional funeral potatoes are often baked in the oven and finished with a crunchy topping made from cornflakes or other ingredients. My version is a little different. First, weโ€™re making them in the crockpot. That means no casserole dish taking up precious oven space, especially on Thanksgiving. Second, I useย cream of celery soup. It gives these potatoes such a delicious savory flavor without overpowering the cheddar cheese. I also add a teaspoon of garlic. I like using my favorite squeezable garlic because itโ€™s quick and easy, but freshly minced garlic works just as well. And finally, instead of putting a topping on before baking, weโ€™re finishing these potatoes with another layer of melted cheddar cheese and buttery French-fried onions that we toast in a skillet. Listen, I know the whole point of a crockpot recipe is convenience. But itโ€™s Thanksgiving! Give me five extra minutes at the stove, because these crispy, buttery onions are worth every single second. That little finishing touch makes these potatoes absolutely irresistible.

Melissaโ€™s Tips!

  • Use freshly shredded cheddar cheese.ย I know buying pre-shredded cheese is easier, but freshly shredded cheddar melts so beautifully. It makes the potatoes extra creamy and gives you that delicious melted cheese layer on top.
  • Donโ€™t thaw the potatoes.ย You can add the frozen diced potatoes directly to the crockpot. No extra preparation necessary!
  • Donโ€™t add all the cheddar at once.ย Only 1 cup goes into the potato mixture before cooking. The remaining cup is reserved for the very end, when you sprinkle it over the cooked potatoes and let it melt.
  • Melt the butter before adding it.ย Those 4 tablespoons of melted butter mix right into the potato mixture and help make everything rich and delicious.
  • Go easy on the salt.ย I use only ยฝ teaspoon because the condensed soup, cheddar cheese, and French-fried onions already have salt. You can always taste the potatoes at the end and add a little more if needed.
  • Stir once every hour.ย This helps the potatoes cook evenly and keeps the creamy mixture distributed throughout the crockpot.
  • Donโ€™t skip the crispy onions!ย Toasting the French-fried onions in butter gives them the most incredible flavor. It only takes a few minutes and makes this recipe extra special.
  • Add the onions right before serving.ย You want that delicious contrast between the creamy potatoes and the crispy topping.

๐Ÿค” Common Questions

Can I use cream of chicken soup instead of cream of celery?

Yes! Cream of chicken soup is commonly used in traditional funeral potato recipes, and it would work well here. But I really love using cream of celery soup. It gives these potatoes such a delicious savory flavor that pairs perfectly with the cheddar cheese.

Can I make Crockpot Party Potatoes ahead of time?

Absolutely! You can prepare the potatoes in advance, refrigerate them, and reheat them before serving. For the best results, wait to add the final layer of cheddar cheese and crispy onion topping until youโ€™re ready to serve. Reheat the potatoes until they reach 165ยฐF, then add the remaining cheddar and let it melt.

Do I need to thaw the frozen potatoes first?

No! Add the frozen diced potatoes directly to the crockpot. Thatโ€™s one of my favorite things about this recipe. No peeling, boiling, or chopping potatoes!
